Black forest cheesecake chocolate crust12/27/2023 ![]() Since that year, I have made this chocolate cherry cheesecake every Christmas. I said to an older man, "I'll be sure to make that for our next event," and he replied, "Would you mind going home to start now?" with a straight face. It was sliced and resliced because everyone wanted a little piece. I took this cheesecake to my church's Thanksgiving service years ago, and there was nary a morsel left to bring home. That's what this cheesecake is – an Oreo cookie crust topped with a layer of cheesecake, then a layer of cherries, then another layer of cheesecake, and the whole thing is topped with rich chocolate ganache. Now imagine the layers are made of cheesecake. Imagine a black forest layer cake with cherries in the center and rich, chocolate ganache covering the top and pouring down over the sides. This chocolate cherry cheesecake recipe makes a rich, almond-flavored cheesecake with a layer of cherries in the center and a layer of chocolate ganache on top. To make this Black Forest cheesecake absolutely over the top, wow, amazing… I thought I’d make some whipped ganache and pipe a border. I didn’t check on it until the very end and I made the mistake of cracking the oven, but not turning off the heat! So it got a bit overcooked and the texture was not as smooth as it could have been. Who would do such a silly thing? Um, apparently me. First of all, don’t put a cheesecake in the oven and then go out back to play in the pool with your toddler. To be honest with you guys, I would probably call this one a blunder, but it was all my fault and everyone said it tasted great. As Ina Garten would say, “Store bought is fine,” but why not spend a little extra time on the homemade cherry pie filling and really impress your guests! The almond extract in this recipe really binds the flavors of the cheesecake and filling. I also suggest using homemade cherry pie filling, like this recipe. The original recipe says to bake for 55 minutes, and you can do that, but cooling it slowly should help prevent cracks. Crack the oven door a few inches and let it cool down for another 5- 10 minutes before removing it to a cooling rack. Bake the cheesecake for 50 minutes, turn off the oven and let it continue to cook for 10 minutes. The recipe is not complicated, but to avoid the dreaded crack, I suggest letting the cheesecake gradually cool down instead of immediately taking it out of the oven. Well, don’t fret about that too much with this cheesecake because you are going to top it with a load of cherry pie filling and no one will see any cracks! We had guests over for fireworks – we had a great view from our driveways – and I wanted to make a dessert that was rich and decadent. Like I mentioned in my Kryptonite Cake post, I get super excited for special occasions because it means I have a legitimate reason to bake something extraordinary! So for this past Fourth of July, I made this scrumptious Black Forest cheesecake. I only recommend products that I use and trust.
